Ingredients

4 large egg whites (room temperature)

1 cup granulated sugar

1/2 teaspoon cream of tartar

1 teaspoon vanilla extract

Food coloring (red, orange, yellow, green, blue, purple)

Cotton candy flavoring (optional, but recommended)

Edible glitter or sprinkles (for topping, optional)

Instructions

Preheat the Oven: Preheat your oven to 200°F (93°C). Line a baking sheet with parchment paper and set aside.

Prepare the Meringue Base: In a large mixing bowl, combine the egg whites and cream of tartar. Using an electric mixer, beat on medium speed until soft peaks form.

Add Sugar Gradually: Increase the mixer speed to medium-high and gradually add the granulated sugar, one tablespoon at a time. Continue beating until stiff peaks form and the mixture is glossy and the sugar is fully dissolved. This should take about 5-7 minutes.

Flavoring and Color: Gently fold in the vanilla extract and a few drops of cotton candy flavoring (if using). Divide the meringue into 6 smaller bowls. Add a few drops of food coloring to each bowl, creating your desired rainbow colors. Gently fold each color to combine, but be careful not to deflate the meringue.

Create the Rainbow Swirl: Using a piping bag fitted with a star tip, scoop a few spoonfuls of each colored meringue into the bag, layering the colors vertically. This will create a beautiful rainbow effect when piped.

Pipe the Meringues: Pipe small rosettes or swirls onto the prepared baking sheets, leaving some space in between each one for spreading.

Bake: Place the baking sheets in the preheated oven and bake for 1.5 to 2 hours, or until the meringues are dry and lift easily off the parchment paper. Turn off the oven and let them cool completely inside with the door slightly ajar.

Finishing Touches: Once cooled, you can sprinkle edible glitter or colored sprinkles on top of each meringue for added sparkle.

Serve and Enjoy: These delightful rainbow cotton candy meringues can be enjoyed as is or used to decorate cakes and desserts. Store any leftovers in an airtight container at room temperature.
