Quick Veggie Quesadillas with Avocado Dip

4 medium whole wheat tortillas

1 cup shredded cheese (cheddar or Monterey Jack)

1 cup bell peppers (mixed colors), diced

1 cup zucchini, diced

1/2 cup corn (fresh or frozen)

1/2 cup black beans, drained and rinsed

1 teaspoon olive oil

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and pepper, to taste

Fresh cilantro, chopped (optional, for garnish)

For the Avocado Dip:

1 ripe avocado

1 tablespoon lime juice

1 small garlic clove, minced

Salt, to taste

2 tablespoons Greek yogurt (or sour cream)

1 tablespoon chopped fresh cilantro (optional)

Instructions
 

Prepare the Veggies: In a skillet over medium heat, add olive oil. Add the diced bell peppers, zucchini, corn, and black beans. Season them with cumin, smoked paprika, salt, and pepper. Sauté for 5-7 minutes, or until veggies are tender but still crisp. Remove from heat and set aside.

    Assemble Quesadillas: On half of each tortilla, sprinkle a portion of cheese, followed by a scoop of the sautéed veggie mixture, and then top with more cheese. Fold the tortillas over to create a half-moon shape.

      Cook Quesadillas: Wipe the skillet clean and return to medium heat. Cook each quesadilla for about 3-4 minutes on each side, or until golden and cheese is melted. Use a spatula to flip them carefully.
