Quick Veggie Fried Rice with Scrambled Eggs

2 cups cooked jasmine or basmati rice (preferably day-old, for best texture)

2 large eggs

1 cup mixed vegetables (peas, carrots, bell peppers, and corn)

1 small onion, finely chopped

2 cloves garlic, minced

3 tablespoons soy sauce (adjust to taste)

1 tablespoon sesame oil

1 tablespoon vegetable oil

1/2 teaspoon ground black pepper

1/4 teaspoon salt (or to taste)

2 green onions, sliced (for garnish)

Optional: 1/4 teaspoon chili flakes for heat

Instructions
 

Prep the Rice: If using freshly cooked rice, spread it out on a baking sheet to cool for about 20 minutes, or use day-old rice directly from the fridge as it won’t clump together.

    Scramble the Eggs: In a medium bowl, beat the eggs and sprinkle a pinch of salt. Heat a non-stick skillet or wok over medium heat and add 1 tablespoon of vegetable oil. Pour in the eggs, stirring gently until they are scrambled and just set. Remove from the pan and set aside.

      Cook the Vegetables: In the same skillet, add another tablespoon of oil. Add the onions and sauté for 2-3 minutes until they become translucent. Stir in the minced garlic and continue to cook for 30 seconds until fragrant.

        Add Mixed Vegetables: Toss in the mixed vegetables and cook for about 4-5 minutes, until they are tender and heated through.

          Combine Rice and Seasonings: Add the cooked rice to the skillet and mix well with the veggies. Break up any clumps of rice as you stir. Drizzle the soy sauce and sesame oil evenly over the rice, then add black pepper and chili flakes, if using. Stir thoroughly to combine all ingredients.

            Incorporate Scrambled Eggs: Gently fold the scrambled eggs into the fried rice mixture to distribute them evenly throughout.
