2 cups cooked jasmine rice (preferably day-old)

1 cup mixed vegetables (carrots, peas, bell peppers, and corn)

1 small onion, diced

2 cloves garlic, minced

2 tbsp soy sauce (more for taste)

1 tbsp sesame oil

1 tsp vegetable oil

2 green onions, chopped

2 eggs (optional)

Salt and pepper to taste

1 tsp sesame seeds (for garnish)

Prep the Rice: If using fresh rice, spread it out on a tray to cool and prevent clumping. Day-old rice works best as it’s less sticky.

    Heat the Oil: In a large skillet or wok, heat the sesame oil and vegetable oil over medium-high heat.

      Sauté Aromatics: Add the diced onion and garlic. Sauté for about 2-3 minutes until the onion becomes translucent and fragrant.
