Quick Teriyaki Chicken and Broccoli Stir-Fry

1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

2 cups broccoli florets

1 cup bell peppers, sliced (any color)

2 cloves garlic, minced

1 inch ginger, grated

¼ cup soy sauce (low sodium preferred)

2 tablespoons honey or maple syrup

1 tablespoon rice vinegar

1 tablespoon sesame oil

1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)

2 tablespoons vegetable oil (for frying)

Sesame seeds for garnish

Green onions, sliced for garnish

Cooked rice or noodles, for serving

Prepare the Sauce: In a small bowl, combine soy sauce, honey (or maple syrup), rice vinegar, and sesame oil. Mix well and set aside.

    Cook the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the chicken pieces to the pan, seasoning lightly with salt and pepper. Stir-fry until they are browned and cooked through, about 5-7 minutes. Remove the chicken from the pan and set aside.

      Sauté Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and grated ginger, stir-frying until fragrant (about 30 seconds). Next, add the broccoli florets and sliced bell peppers, cooking for another 3-5 minutes until the vegetables are tender but still vibrant.

        Combine: Return the cooked chicken to the pan with the vegetables. Pour the prepared teriyaki sauce over the mixture, and bring to a gentle simmer.

          Thicken the Sauce: Whisk the cornstarch and water mixture, then gradually add it to the pan, stirring continuously. Allow the sauce to thicken for about 1-2 minutes while everything is coated evenly.
