1 lb ground turkey

1 tablespoon olive oil

1 taco seasoning packet (or homemade blend)

1 cup corn (canned or frozen)

1 cup black beans, rinsed and drained

1 medium tomato, diced

1 cup cherry tomatoes, halved

1 cup shredded lettuce

1 ripe avocado, diced

1/2 cup shredded cheese (cheddar or Mexican blend)

1/4 cup red onion, diced

1/4 cup fresh cilantro, chopped

1/2 lime, juiced

Tortilla chips, for serving

Salsa and sour cream, for garnish (optional)

Instructions
 

Cook the Turkey: In a large skillet, heat the olive oil over medium heat. Add the ground turkey, breaking it apart with a spatula, and cook until browned, about 5-7 minutes.

    Season the Turkey: Once the turkey is cooked through, add the taco seasoning to the skillet, mixing well. If using a homemade blend, stir in 1/2 cup of water to the turkey to help the spices combine. Let it simmer for about 3-4 minutes until the sauce thickens slightly.

      Prepare the Salad Base: While the turkey cooks, in a large bowl, layer the shredded lettuce, diced tomato, cherry tomatoes, corn, black beans, diced avocado, and red onion.

        Combine Ingredients: Once the turkey is ready, add it to the bowl of veggies and toss gently to mix. Squeeze the lime juice over the top and sprinkle with fresh cilantro.
