Ingredients

14 oz kielbasa sausage, sliced into half-moons

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 zucchini, sliced into half-moons

1 cup broccoli florets

1 medium onion, thinly sliced

3 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon dried oregano

Salt and pepper, to taste

Fresh parsley or basil, for garnish (optional)

Instructions

Heat the Skillet: In a large skillet, heat the olive oil over medium heat until shimmering.

Cook the Kielbasa: Add the sliced kielbasa to the skillet, stirring occasionally. Cook for about 5-7 minutes, or until the sausage is browned and heated through.

Sauté the Vegetables: Add the sliced onion and minced garlic to the skillet with the kielbasa. Sauté for 2-3 minutes until the onion begins to soften.

Add Remaining Veggies: Toss in the sliced bell peppers, zucchini, and broccoli florets. Stir well to combine with the sausage and onion mixture.

Season the Dish: Sprinkle the smoked paprika, dried oregano, salt, and pepper over the skillet. Mix everything thoroughly to ensure even distribution of the spices.

Cook Until Tender: Continue cooking for an additional 5-7 minutes, stirring occasionally, until the veggies are tender yet crisp. If needed, add a splash of water to help steam the vegetables.

Finish and Garnish: Remove the skillet from the heat. Taste and adjust the seasoning if necessary. Garnish with fresh parsley or basil before serving.
