1.5 pounds baby carrots, peeled

1/4 cup pure maple syrup

2 tablespoons olive oil

1 teaspoon sea salt

1/2 teaspoon black pepper

1 teaspoon ground cinnamon

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

Optional: Chopped parsley for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Carrots: In a large bowl, combine the peeled baby carrots with olive oil, maple syrup, sea salt, black pepper, and ground cinnamon. Toss well to evenly coat the carrots with the mixture.

      Season the Carrots: Sprinkle the thyme over the carrots and toss again. Make sure all the carrots are evenly distributed with the glaze and seasoning.

        Arrange on Sheet Pan: Spread the glazed carrots out in a single layer on a large rimmed baking sheet. Try to keep them from touching to ensure even cooking.

          Roast the Carrots: Place the sheet pan in the preheated oven and roast for about 20-25 minutes, stirring halfway through. The carrots should be fork-tender and caramelized at the edges.

            Garnish and Serve: Once done, remove the pan from the oven. If desired, sprinkle freshly chopped parsley for a pop of color. Serve warm as a delightful side dish to complement any meal!
