1 bunch of fresh kale, stems removed and leaves roughly chopped

3 tablespoons olive oil

4 cloves garlic, thinly sliced

Zest of 1 lemon

Juice of 1 lemon

1/2 teaspoon red pepper flakes (optional, for a kick)

Salt and pepper, to taste

2 tablespoons grated Parmesan cheese (optional, for serving)

Lemon wedges, for garnish

Prepare the Kale: In a large bowl, rinse the kale under cold water to remove any dirt. Shake off excess water and roughly chop the leaves, removing tough stems.

    Heat the Oil: In a large skillet, heat the olive oil over medium heat. Once hot, add the sliced garlic and sauté for about 1 minute, or until it becomes fragrant but not browned.

      Add the Kale: Carefully add the chopped kale to the skillet, stirring well to coat it in the garlic oil. Cook for about 3-5 minutes, stirring occasionally, until the kale wilts down and brightens in color.
