1 pound fresh okra, trimmed

1 cup distilled white vinegar

1/2 cup water

2 tablespoons sea salt

2 tablespoons sugar

4 cloves garlic, smashed

1 teaspoon red pepper flakes (adjust for spice preference)

1 teaspoon mustard seeds

1 teaspoon coriander seeds

1/2 teaspoon black peppercorns

Fresh dill sprigs

Prepare the Brine: In a medium saucepan, combine the distilled white vinegar, water, sea salt, and sugar. Heat the mixture over medium heat until the salt and sugar dissolve completely. Remove from heat and let it cool slightly.

    Pack the Jars: While the brine is cooling, wash and dry the okra. In a clean glass jar or container, add the smashed garlic, red pepper flakes, mustard seeds, coriander seeds, black peppercorns, and fresh dill sprigs.

      Add the Okra: Stand the okra upright in the jar, packing them tightly without bruising them.

        Pour the Brine: Once the brine has cooled to room temperature, pour it over the okra until fully submerged. Use a clean utensil to push down the okra if necessary.

          Seal and Let Sit: Seal the jar tightly and let it sit at room temperature for at least 1 hour. For the best flavor, refrigerate for at least 24 hours before serving. They can be enjoyed for up to 2 weeks in the fridge.
