1 cup all-purpose flour

1 cup whole wheat flour

1 tbsp baking powder

1 tsp salt

1 tbsp sugar (optional)

1 cup buttermilk (or milk with a splash of vinegar)

2 tbsp melted butter (or oil)

1 tsp caraway seeds (optional, for a traditional flavor)

Instructions
 

In a large mixing bowl, combine the all-purpose flour, whole wheat flour, baking powder, salt, and sugar (if using). Stir until well mixed.

    In another bowl, whisk together the buttermilk and melted butter until combined.

      Pour the wet mixture into the dry ingredients and stir until just combined. Do not overmix; a few lumps are perfectly fine.

        If using, fold in the caraway seeds for added flavor.

          Grease a microwave-safe dish or a skillet. Spread the dough evenly in the dish, smoothing the top with a spatula.

            Cover the dish with a microwave-safe lid or plate (not airtight). Microwave on high for about 3-5 minutes, checking at 3 minutes and adding additional time as necessary. The bread is done when it has risen, feels firm, and a toothpick inserted into the center comes out clean.

              Let the bread cool in the dish for a couple of minutes, then transfer to a wire rack to cool completely.
