Ingredients

1 lb (450g) fresh salmon fillet, skin removed and cut into 1-inch cubes

3 tablespoons olive oil

3 cloves garlic, minced

1 tablespoon fresh lemon juice

1 tablespoon fresh parsley, chopped

1 tablespoon fresh dill, chopped

1 teaspoon paprika

Salt and pepper, to taste

8-10 skewers (soaked in water if wooden)

Lemon wedges, for serving

Instructions

Prepare the Marinade: In a bowl, whisk together olive oil, minced garlic, lemon juice, parsley, dill, paprika, salt, and pepper until well combined.

Marinate the Salmon: Add the cubed salmon to the marinade, ensuring each piece is well coated. Cover and let it marinate in the refrigerator for at least 15 minutes (or up to 2 hours for more flavor).

Preheat the Grill: Preheat your grill or grill pan over medium-high heat. If using a grill, oil the grates lightly to prevent sticking.

Skewer the Salmon: Thread the marinated salmon cubes onto the skewers, leaving a little space between each piece for even cooking.

Grilling the Skewers: Place the skewers on the grill and cook for about 3-4 minutes per side, or until the salmon is opaque and flakes easily with a fork.

Serve: Remove from the grill and let rest for a minute. Serve the skewers with fresh lemon wedges on the side for an extra burst of flavor. Enjoy your meal!
