8 oz spaghetti or linguine

1 lb shrimp, peeled and deveined

4 cloves garlic, minced

1/4 cup olive oil

Juice and zest of 1 large lemon

1/4 tsp red pepper flakes (adjust to taste)

Salt and freshly ground black pepper to taste

1 cup cherry tomatoes, halved

2 cups fresh spinach

1/4 cup fresh parsley, chopped

Grated Parmesan cheese for serving (optional)

Cook the Pasta: In a large pot, bring salted water to a boil. Add the spaghetti or linguine and cook according to the package instructions until al dente. Drain and reserve about 1/2 cup of pasta water.

    Sauté the Shrimp: In a large skillet, heat the olive oil over medium-high heat. Add the minced garlic and red pepper flakes, cooking until the garlic is fragrant (about 30 seconds). Add the shrimp, season with salt and pepper, and sauté until the shrimp turn pink and opaque, about 2-3 minutes.

      Add the Tomatoes and Spinach: Stir in the halved cherry tomatoes and fresh spinach, cooking until the spinach has wilted and the tomatoes are slightly softened, about 2 minutes.

        Combine and Flavor: Reduce the heat to low. Add the cooked pasta to the skillet with the shrimp and vegetables. Squeeze the lemon juice and add the zest, tossing everything together. If the pasta seems dry, add a bit of the reserved pasta water until you reach your desired consistency.
