Quick Chicken Stir-Fry

1 lb (450g) boneless, skinless chicken breasts, thinly sliced

2 tablespoons soy sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil

1 red bell pepper, julienned

1 cup snap peas, trimmed

2 carrots, thinly sliced

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 lemon, zested and juiced

2 green onions, chopped

Sesame seeds for garnish

Salt and pepper to taste

Instructions
 

Marinate the Chicken: In a bowl, combine the sliced chicken, soy sauce, cornstarch, salt, and pepper. Mix well and let it marinate for at least 15 minutes.

    Prepare Stir-Fry Base: Heat 1 tablespoon of vegetable oil in a large non-stick skillet or wok over medium-high heat. Once hot, add the marinated chicken slices and cook until they are golden brown and cooked through, about 5-6 minutes. Remove the chicken from the pan and set it aside.

      Cook Vegetables: In the same pan, add the remaining tablespoon of oil. Toss in minced garlic and grated ginger, cooking for about 30 seconds until fragrant. Then, add the red bell pepper, snap peas, and carrots. Stir-fry the vegetables for 3-4 minutes until they are tender-crisp.

        Combine and Flavor: Return the cooked chicken to the skillet with the vegetables. Add the lemon zest, lemon juice, and chopped green onions. Stir everything together for another 2 minutes to allow the flavors to meld.

          Serve: Remove from heat and garnish with sesame seeds. Serve the stir-fry immediately over steamed rice or noodles for a complete meal.
