2 boneless, skinless chicken breasts, sliced into thin strips

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon cumin

1/2 teaspoon smoked paprika

1/2 teaspoon garlic powder

Salt and pepper, to taste

1 bell pepper (red or yellow), sliced into strips

1 green bell pepper, sliced into strips

1 small red onion, sliced

4 large flour tortillas

1 cup shredded cheddar cheese

1 cup sour cream or Greek yogurt

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Preparation of Chicken: In a large bowl, combine the sliced chicken with olive oil, chili powder, cumin, smoked paprika, garlic powder, salt, and pepper. Toss to coat the chicken evenly with the spices.

    Cook the Chicken: Heat a large skillet or frying pan over medium-high heat. Add the seasoned chicken strips to the skillet and cook for about 5-7 minutes, stirring occasionally until they are browned and cooked through. Remove the chicken from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add a bit more olive oil if needed. Toss in the sliced bell peppers and red onion. Sauté for about 4-5 minutes until the vegetables are tender and slightly caramelized.

        Combine Chicken and Vegetables: Return the cooked chicken to the skillet with the sautéed peppers and onions. Mix well and cook for an additional 1-2 minutes to combine the flavors.
