1 lb beef (chuck or flank), cut into 1-inch cubes

2 tablespoons vegetable oil

1 large onion, thinly sliced

4 cloves garlic, minced

1-inch piece ginger, grated

2 tablespoons vindaloo spice paste (store-bought or homemade)

1 tablespoon brown sugar

1 cup tomato sauce

1/2 cup beef broth

1 tablespoon white vinegar

Salt to taste

Fresh cilantro, chopped (for garnish)

Sear the Beef: In a large pot or Dutch oven, heat the oil over medium-high heat. Add the beef cubes and sear until browned on all sides. Remove the beef and set aside.

    Sauté Onions: In the same pot, add the sliced onions and sauté for about 5 minutes, until they turn translucent and slightly caramelized.

      Add Aromatics: Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.

        Spice It Up: Add the vindaloo spice paste and brown sugar to the pot. Cook for 2-3 minutes, stirring constantly to toast the spices and enhance flavors.
