Ingredients

For the Tacos:

1 lb (450g) ground beef

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper to taste

8 small corn or flour tortillas

1 cup shredded lettuce

1 cup diced tomatoes

1 cup shredded cheese (cheddar or Mexican blend)

½ cup sour cream or Greek yogurt (optional)

For the Fresh Salsa:

2 cups diced ripe tomatoes (about 3-4 tomatoes)

1 small red onion, finely chopped

1 jalapeño, seeded and minced (adjust to taste)

¼ cup fresh cilantro, chopped

Juice of 1 lime

Salt to taste

Instructions

Prepare the Fresh Salsa: In a medium bowl, combine the diced tomatoes, red onion, jalapeño, and cilantro. Squeeze the lime juice over the top and season with salt to taste. Mix well and let it sit for at least 10 minutes to allow the flavors to meld.

Cook the Ground Beef: In a large skillet, heat olive oil over medium-high heat. Add the ground beef and cook until browned, breaking it up with a spoon, about 5-7 minutes.

Season the Beef: Once the beef is cooked, drain excess fat if needed. Add the chili powder, cumin, garlic powder, onion powder, salt, and pepper. Stir to combine and cook for an additional 2-3 minutes until the spices are fragrant.

Warm the Tortillas: In a separate skillet or griddle, warm the tortillas over medium heat for about 30 seconds on each side until they are pliable and lightly toasted.

Assemble the Tacos: On each tortilla, layer a generous scoop of the seasoned beef, topped with shredded lettuce, diced tomatoes, cheese, and a dollop of sour cream if desired.

Serve: Fill the tacos with the fresh salsa and additional toppings as desired. Serve immediately with lime wedges on the side.

Prep Time: 15 minutes | Total Time: 30 minutes | Servings: 4 (2 tacos each)
