Quick Beef Stir-Fry with Bell Peppers

1 lb (450g) beef sirloin, thinly sliced against the grain

2 tablespoons vegetable oil

1 red bell pepper, sliced into strips

1 yellow bell pepper, sliced into strips

1 medium onion, sliced

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

1 tablespoon soy sauce

1 tablespoon oyster sauce

1 teaspoon sesame oil

1 teaspoons cornstarch mixed with 2 tablespoons water (for thickening)

¼ teaspoon black pepper

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Cooked rice or noodles (for serving)

Instructions
 

Prep the Ingredients: Thinly slice the beef against the grain to ensure tenderness. Prepare the bell peppers, onion, garlic, and ginger and keep them separated for quick access during cooking.

    Marinate the Beef (optional): In a bowl, toss the sliced beef with soy sauce, oyster sauce, black pepper, and let it marinate for about 15-20 minutes for additional flavor—this step is optional but recommended!

      Heat the Oil: In a large wok or skillet, heat 2 tablespoons of vegetable oil over medium-high heat until shimmering.

        Cook the Beef: Add the marinated beef to the hot wok in a single layer. Sear the beef for about 2-3 minutes until browned but not fully cooked. Remove the beef and set aside.

          Stir-Fry the Veggies: In the same wok, add a bit more oil if necessary, then toss in the sliced bell peppers, onion, minced garlic, and ginger. Stir-fry for 3-4 minutes until the vegetables start to soften but still retain some crunch.
