Quick Beef and Broccoli Stir-Fry

1 lb (450g) beef sirloin, thinly sliced against the grain

3 cups broccoli florets

2 tbsp vegetable oil (divided)

3 cloves garlic, minced

1-inch piece of ginger, grated

3 tbsp soy sauce (low sodium recommended)

1 tbsp oyster sauce

1 tbsp cornstarch

2 tbsp beef broth (or water)

1 tsp sesame oil

Salt and pepper to taste

Cooked rice or noodles for serving

Toasted sesame seeds for garnish (optional)

Prep the Beef: In a bowl, combine the sliced beef with 1 tablespoon of soy sauce, cornstarch, and a pinch of salt. Let it marinate for about 10 minutes while you prepare the other ingredients.

    Blanch the Broccoli: Bring a pot of water to boil. Add the broccoli florets and cook for 2 minutes until vibrant and just tender. Immediately transfer to an ice water bath to stop cooking, then drain and set aside.

      Heat the Oil: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat until shimmering.

        Cook the Beef: Add the marinated beef to the hot skillet in a single layer. Let it sear for about 2 minutes without moving it, then stir-fry for an additional 2 minutes until it's just browned but not fully cooked. Remove the beef from the skillet and set aside.

          Stir-Fry Aromatics: In the same skillet, add the remaining tablespoon of vegetable oil. Add minced garlic and grated ginger, stirring quickly for about 30 seconds until fragrant.

            Combine Ingredients: Return the beef to the skillet along with the blanched broccoli. Pour in the remaining 2 tablespoons of soy sauce, oyster sauce, beef broth, and sesame oil. Stir everything together and cook for another 2-3 minutes until the beef is cooked through and the sauce coats the beef and broccoli nicely.

              Final Touches: Taste and adjust seasoning with salt and pepper as needed. If you desire more sauce, add a splash more beef broth or soy sauce.

                Serve: Serve the stir-fry over cooked rice or noodles, and sprinkle with toasted sesame seeds if desired.
