Ingredients

For the Shrimp:

1 lb (450g) medium shrimp, peeled and deveined

2 tablespoons olive oil

1 teaspoon chili powder

1 teaspoon cumin

1/2 teaspoon garlic powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

1 lime, juiced

For the Slaw:

2 cups shredded green cabbage

1 cup finely sliced red cabbage

1 medium carrot, grated

1/4 cup fresh cilantro, chopped

2 tablespoons mayonnaise

1 tablespoon apple cider vinegar

1 teaspoon honey

Salt and pepper to taste

For Assembly:

8 small corn or flour tortillas

Fresh avocado slices (optional)

Lime wedges for serving

Instructions

Prepare the Shrimp: In a mixing bowl, combine olive oil, chili powder, cumin, garlic powder, smoked paprika, salt, pepper, and lime juice. Add the shrimp and toss to coat evenly. Let marinate for about 10 minutes.

Make the Slaw: In a large bowl, mix together the shredded green and red cabbage, grated carrot, and chopped cilantro. In a small bowl, whisk together mayonnaise, apple cider vinegar, honey, salt, and pepper. Pour the dressing over the cabbage mixture and toss until evenly coated. Set aside.

Cook the Shrimp: Heat a large skillet over medium-high heat. Add the marinated shrimp in a single layer and cook for about 2-3 minutes on each side until they are pink and cooked through. Remove from heat.

Warm the Tortillas: In an open flame or a separate skillet, warm the tortillas until they are soft and pliable, about 30 seconds on each side. Keep them warm in a clean kitchen towel.

Assemble the Tacos: Place a generous spoonful of the cabbage slaw on each tortilla, followed by a few pieces of shrimp. Top with fresh avocado slices if desired, and finish with a squeeze of lime juice.

Serve and Enjoy: Serve immediately with lime wedges on the side for an extra zest!
