1 cup pumpkin puree (canned or freshly made)

1 cup graham cracker crumbs

1 cup white chocolate chips

1 teaspoon pumpkin pie spice (plus extra for dusting)

1/4 teaspoon vanilla extract

1/4 cup cream cheese, softened

1 cup finely chopped walnuts or pecans (optional)

1 cup dark chocolate (for coating)

Instructions
 

Combine Ingredients: In a medium mixing bowl, combine the pumpkin puree, softened cream cheese, graham cracker crumbs, pumpkin pie spice, vanilla extract, and a pinch of salt. Mix until you have a smooth and well-combined mixture.

    Chill the Mixture: Cover the bowl with plastic wrap and refrigerate the mixture for about 30 minutes to 1 hour, until it becomes easier to handle.

      Shape the Truffles: Once chilled, use your hands to scoop out about a tablespoon of the pumpkin mixture. Roll it into a ball shape. If you prefer, you can also press in a piece of walnut or pecan into the center of each ball for added texture and flavor.

        Melt Dark Chocolate: In a microwave-safe bowl, melt the dark chocolate in 30-second intervals, stirring in between, until smooth and fully melted. Be careful not to overheat.

          Coat the Truffles: Dip each pumpkin ball into the melted dark chocolate, ensuring it's fully coated. Use a fork to lift it out and allow excess chocolate to drip off.

            Set the Truffles: Place the coated truffles on a parchment-lined baking sheet. While the chocolate is still wet, sprinkle a little extra pumpkin pie spice on top for a festive touch.
