2 cups rolled oats

1 cup canned pumpkin puree

1/2 cup almond milk (or your choice of milk)

1/4 cup maple syrup (or honey)

1/4 cup brown sugar (packed)

2 ripe bananas, mashed

1 tsp vanilla extract

1 tsp pumpkin pie spice

1/2 tsp cinnamon

1/2 tsp baking powder

1/4 tsp salt

1/2 cup walnuts or pecans, chopped (optional)

1/2 cup raisins or chocolate chips (optional)

Instructions
 

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Prepare a muffin tin by greasing it lightly or lining it with muffin liners.

    Mix Wet Ingredients: In a large mixing bowl, combine the canned pumpkin puree, almond milk, maple syrup, mashed bananas, and vanilla extract. Whisk them together until smooth and well integrated.

      Combine Dry Ingredients: In another bowl, mix together the rolled oats, pumpkin pie spice, cinnamon, baking powder, and salt. If you're adding nuts or raisins/chocolate chips, incorporate them into this mixture.

        Combine Mixtures: Gradually add the dry ingredients to the wet mixture. Stir gently until everything is combined well. Avoid overmixing; the oats should be just coated.

          Distribute Batter: Evenly spoon the batter into the prepared muffin tin, filling each cup about 3/4 full. This recipe yields approximately 12 oatmeal cups.

            Bake: Place the muffin tin in the oven and bake for about 20-25 minutes, or until the tops are set and slightly golden. A toothpick inserted in the center should come out mostly clean.
