1 ½ cups rolled oats

½ cup raw pumpkin seeds (pepitas)

¼ cup chopped pecans or walnuts

¼ cup unsweetened shredded coconut

½ teaspoon ground cinnamon

½ teaspoon ground nutmeg

¼ teaspoon ground ginger

¼ teaspoon ground cloves

¼ teaspoon salt

¼ cup honey or maple syrup

½ cup creamy almond butter (or peanut butter)

1 teaspoon pure vanilla extract

½ cup mini chocolate chips (optional)

¼ cup dried cranberries or raisins (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, pumpkin seeds, chopped nuts, shredded coconut, cinnamon, nutmeg, ginger, cloves, and salt. Stir well to combine.

      Prepare Wet Mixture: In a small saucepan over low heat, warm the honey (or maple syrup) and almond butter until smooth and combined. Remove from heat and stir in the vanilla extract.

        Combine Mixtures: Pour the warm wet mixture over the dry ingredients. Mix with a spatula or your hands until everything is evenly coated.

          Add Extras: If desired, fold in the mini chocolate chips and dried cranberries or raisins.

            Form Bites: Using your hands, take small portions of the mixture and press them tightly into ball shapes. Place them on the prepared baking sheet, spacing them about an inch apart.

                Cool and Store: Once baked, allow the granola bites to cool on the baking sheet for about 10 minutes before transferring them to a wire rack to cool completely. Store in an airtight container at room temperature for up to one week.
