8 slices of bread (white or whole wheat works best)

1 cup pure pumpkin puree (not pumpkin pie filling)

3 large eggs

1/2 cup milk (dairy or non-dairy)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon ground ginger

1/4 cup granulated sugar

1/4 cup brown sugar

4 tablespoons butter (for cooking)

Powdered sugar (for dusting)

Maple syrup (for serving)

Prepare the Filling: In a medium bowl, combine the pumpkin puree, cinnamon, nutmeg, ginger, granulated sugar, and a pinch of salt. Mix until smooth and well combined.

    Flatten the Bread: Using a rolling pin, flatten each slice of bread to make it easier to roll up. Aim for about 1/4 inch thickness.

      Add the Filling: Place about 1-2 tablespoons of the pumpkin mixture near one edge of each slice of flattened bread. Roll the bread tightly around the filling, starting from the edge with the filling, and secure the ends slightly.

        Set Up a Dipping Station: In a shallow dish, whisk together the eggs, milk, vanilla extract, and a pinch of cinnamon. In another shallow dish, mix the brown sugar with a sprinkle of cinnamon for coating.
