Ingredients

1 loaf of brioche or challah bread, cut into 1-inch cubes

1 cup pumpkin puree (not pie filling)

4 large eggs

1 cup milk (or your choice of milk substitute)

½ cup heavy cream

¾ cup brown sugar, packed

2 teaspoons vanilla extract

2 teaspoons pumpkin pie spice

½ teaspoon ground cinnamon

¼ teaspoon salt

½ cup chopped pecans or walnuts (optional)

Powdered sugar for serving (optional)

Maple syrup for drizzling

Instructions

Prepare the Baking Dish: Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish with butter or non-stick spray.

Cube the Bread: Cut the brioche or challah bread into 1-inch cubes and evenly distribute them in the prepared baking dish. If using nuts, sprinkle them over the bread cubes.

Mix the Wet Ingredients: In a large mixing bowl, whisk together the pumpkin puree, eggs, milk, heavy cream, brown sugar, vanilla extract, pumpkin pie spice, cinnamon, and salt until smooth and well-combined.

Combine and Soak: Pour the pumpkin mixture over the cubed bread, ensuring each piece is coated. Gently press down on the bread to help it absorb the liquid. Cover with plastic wrap and refrigerate for at least 30 minutes to overnight, allowing the flavors to meld and the bread to soak up the mixture.

Bake: Remove the baking dish from the refrigerator and let it sit at room temperature for 10 minutes while the oven finishes preheating. Bake for 40-45 minutes, or until the top is golden brown and the custard is set.

Cool and Serve: Allow the French toast bake to cool for about 10 minutes before cutting into squares. Dust with powdered sugar if desired and serve warm, drizzled with maple syrup.

Enjoy: Gather your loved ones and enjoy this delicious and comforting Pumpkin Spice French Toast Bake!
