Ingredients
  

1 cup rolled oats

1/2 cup pumpkin puree (canned or fresh)

1/3 cup nut butter (almond, peanut, or cashew)

1/4 cup honey or maple syrup

1/2 teaspoon vanilla extract

1 teaspoon pumpkin pie spice

1/4 teaspoon ground cinnamon

1/4 cup flaxseed meal (optional)

1/4 cup chocolate chips (dark or semi-sweet)

A pinch of salt

Instructions
 

In a large mixing bowl, combine rolled oats, pumpkin puree, nut butter, honey or maple syrup, and vanilla extract. Stir until well combined.

    Add pumpkin pie spice, ground cinnamon, flaxseed meal (if using), chocolate chips, and a pinch of salt to the bowl. Mix thoroughly until all ingredients are evenly distributed.

      Using your hands, or a small ice cream scoop, roll the mixture into bite-sized balls (about 1 inch in diameter).

        Place the rolled energy bites on a parchment-lined baking sheet or a plate.

          Once all the mixture is rolled, refrigerate the bites for at least 30 minutes to firm up.

            After chilling, transfer the energy bites to an airtight container. Store them in the fridge for up to a week or freeze for longer storage.
