Ingredients

1 cup rolled oats

1/2 cup canned pumpkin puree

1/4 cup almond butter (or any nut/seed butter of your choice)

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1 teaspoon pumpkin pie spice (or 1/2 tsp cinnamon, 1/2 tsp nutmeg)

1/4 teaspoon salt

1/4 cup mini chocolate chips (optional)

1/4 cup chopped nuts (like walnuts or pecans) or seeds (like sunflower or chia seeds) (optional)

Instructions

Mix the Ingredients: In a large mixing bowl, combine the rolled oats, pumpkin puree, almond butter, honey (or maple syrup), vanilla extract, pumpkin pie spice, and salt. Stir well until all the ingredients are thoroughly combined and form a sticky mixture.

Add Extras: If you'd like to incorporate chocolate chips and/or nuts/seeds, fold them into the mixture at this stage.

Chill the Mixture: Cover the bowl with plastic wrap or a lid and place it in the refrigerator for about 30 minutes. This will help the mixture firm up, making it easier to form balls.

Form the Balls: After chilling, take a tablespoon of the mixture and roll it between your palms to form small balls, about 1 inch in diameter. Place each ball on a parchment-lined baking sheet or a plate.

Store the Snack Balls: Once all the mixture is rolled into balls, you can store them in an airtight container. Keep them in the refrigerator for up to one week or freeze for up to three months for extended freshness.

Enjoy: Snack on these delightful Pumpkin Spice Energy Bites whenever you need a quick boost of energy or a healthy treat!
