Ingredients

For the Pumpkin Cupcakes:

1 ¾ cups all-purpose flour

1 tsp baking powder

½ tsp baking soda

½ tsp salt

1 tsp ground cinnamon

½ tsp ground nutmeg

¼ tsp ground ginger

½ cup unsalted butter, softened

1 cup granulated sugar

1 cup packed brown sugar

2 large eggs

1 cup canned pumpkin puree (not pumpkin pie filling)

1 tsp vanilla extract

½ cup buttermilk

For the Cream Cheese Frosting:

8 oz cream cheese, softened

½ cup unsalted butter, softened

4 cups powdered sugar

1 tsp vanilla extract

Pinch of salt

Optional: chopped pecans or walnuts for garnish

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C) and lining a muffin tin with cupcake liners.

Combine Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger. Set aside.

Mix the Butters and Sugars: In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together until fluffy and light in color, about 2-3 minutes.

Add Eggs and Pumpkin: Add the eggs one at a time, mixing well after each addition. Next, mix in the pumpkin puree and vanilla extract until fully combined.

Incorporate Dry Ingredients: Gradually add the dry ingredients to the pumpkin mixture, alternating with buttermilk. Start and end with the flour mixture, mixing until just combined; do not overmix.

Fill Muffin Tin: Evenly distribute the cupcake batter into the prepared muffin tin. Each liner should be about two-thirds full.

Bake: Bake in the preheated oven for 20-22 minutes, or until a toothpick inserted into the center comes out clean. Remove from oven and allow cupcakes to cool in the tin for about 10 minutes before transferring them to a wire rack to cool completely.

Prepare Cream Cheese Frosting: In a medium bowl, beat together the softened cream cheese and butter until smooth and creamy. Gradually mix in the powdered sugar, vanilla extract, and a pinch of salt until desired sweetness and consistency are achieved.

Frost the Cupcakes: Once the cupcakes are cool, use a piping bag or a knife to generously frost each cupcake with the cream cheese frosting.

Garnish (Optional): If desired, sprinkle chopped pecans or walnuts on top for an added crunch.

Serve and Enjoy: Share these delightful pumpkin cupcakes with friends and family, and enjoy the flavors of fall in every bite!
