For the Cake:

1 ½ cups all-purpose flour

1 tsp baking powder

½ tsp baking soda

½ tsp salt

1 tsp ground cinnamon

½ tsp ground nutmeg

½ tsp ground ginger

½ cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 cup canned pumpkin puree

1 tsp vanilla extract

½ cup buttermilk

For the Streusel Topping:

¾ cup all-purpose flour

½ cup packed brown sugar

1 tsp ground cinnamon

¼ cup unsalted butter, melted

½ cup chopped walnuts (optional)

For the Glaze:

1 cup powdered sugar

2 tbsp milk

½ tsp vanilla extract

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch square baking pan or a round springform pan.

    Prepare the Cake Batter: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger. Set aside.

      Cream Butter and Sugar: In a large bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.

        Incorporate Eggs: Add the eggs, one at a time, mixing well after each addition, followed by the pumpkin puree and vanilla extract. Beat until smooth.

          Combine Wet and Dry Ingredients: Gradually add the dry flour mixture to the pumpkin mixture, alternating with the buttermilk. Begin and end with the flour mixture. Mix until just combined and be careful not to overmix.

            Make the Streusel: In a small bowl, combine the flour, brown sugar, and cinnamon. Pour in the melted butter and mix until crumbly. Stir in the chopped walnuts if using.

              Layer the Cake: Pour half of the batter into the prepared pan. Sprinkle half of the streusel mixture on top. Pour the remaining batter over it and top with the rest of the streusel.

                Bake: Bake in the preheated oven for 35-40 minutes or until a toothpick inserted into the center comes out clean.

                  Prepare the Glaze: While the cake is baking, whisk together the powdered sugar, milk, and vanilla extract in a small bowl until smooth. Adjust the consistency with more milk or sugar if necessary.

                    Cool and Glaze: Once the cake is done, remove it from the oven and let it cool in the pan for about 10 minutes. Transfer to a wire rack and let it cool completely before drizzling with the glaze.
