Pumpkin Chocolate Chip Bread

1 cup canned pumpkin puree (not pumpkin pie filling)

1/2 cup granulated sugar

1/2 cup brown sugar, packed

1/2 cup vegetable oil or melted coconut oil

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger (optional)

1 cup semi-sweet chocolate chips

1/2 cup chopped walnuts or pecans (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line it with parchment paper for easy removal.

    Mix the Wet Ingredients: In a large mixing bowl, combine the canned pumpkin puree, granulated sugar, brown sugar, and vegetable oil. Whisk until smooth and well combined. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

      Combine the Dry Ingredients: In a separate bowl, sift together the all-purpose flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger (if using).

        Mix Together: Gradually add the dry mixture to the wet mixture, stirring gently until just combined. Be careful not to overmix; some lumps are okay.

          Fold in Chocolate Chips and Nuts: Gently fold in the semi-sweet chocolate chips and, if desired, the chopped walnuts or pecans.
