Ingredients

1 cup ripe bananas (about 2-3 medium), mashed

1 cup pumpkin puree (canned or fresh)

1/2 cup vegetable oil or melted coconut oil

1/2 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1/2 teaspoon ginger powder

1/4 teaspoon ground cloves

1/4 teaspoon salt

1/2 cup chopped walnuts or pecans (optional)

1/2 cup chocolate chips (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan with cooking spray or line it with parchment paper for easy removal.

Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas, pumpkin puree, oil, brown sugar, granulated sugar, eggs, and vanilla extract. Whisk together until smooth and well-blended.

Combine Dry Ingredients: In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, ginger, cloves, and salt until evenly mixed.

Fold Mixtures Together: Gradually add the dry ingredients to the wet ingredients, using a spatula or wooden spoon to fold until just combined. Be careful not to over-mix; it's okay if a few lumps remain.

Add Nuts and Chocolate (Optional): If using, fold in the walnuts or pecans and chocolate chips until evenly distributed throughout the batter.

Pour the Batter: Pour the batter into the prepared loaf pan. Smooth the top with a spatula to ensure an even bake.

Bake: Place the loaf pan in the preheated oven and bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean. If the top begins to darken too much during baking, tent it loosely with aluminum foil.

Cool Down: Once baked, remove the bread from the oven and let it cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely.

Slice and Serve: Once cooled, slice your pumpkin banana bread and enjoy it as is, or lightly toasted with a spread of butter or cream cheese.
