Ingredients

1 cup Greek yogurt (unsweetened)

1/2 cup nut butter (preferably natural peanut butter)

1/4 cup protein powder (vanilla or chocolate flavor)

2 tbsp honey or maple syrup (adjust to taste)

1 tsp vanilla extract

1/2 tsp cinnamon (optional)

1/4 cup crushed graham crackers or almond flour (for crust)

2 tbsp coconut oil (melted)

Pinch of salt

Dark chocolate shavings (for garnish, optional)

Chopped peanuts (for garnish, optional)

Instructions

Prepare the Crust: In a medium bowl, mix the crushed graham crackers or almond flour with melted coconut oil and a pinch of salt. Stir until well combined and crumbly.

Assemble the Base: Line a muffin tin with cupcake liners. Evenly distribute the crust mixture into the bottom of each liner, pressing down firmly to create a solid base. Place the muffin tin in the freezer while preparing the cheesecake filling.

Make the Cheesecake Filling: In a separate large mixing bowl, combine Greek yogurt, nut butter, protein powder, honey or maple syrup, vanilla extract, and cinnamon (if using). Mix vigorously with a hand mixer or whisk until the mixture is smooth and creamy.

Fill the Cups: Remove the muffin tin from the freezer and carefully spoon the cheesecake filling over the crust in each liner, filling them approximately 3/4 full.

Chill: Return the filled muffin tin to the freezer for at least 2-3 hours or until the cheesecake cups are firm and set.

Serve: When ready to serve, remove the cups from the freezer and let them sit at room temperature for 5-10 minutes for easier removal from the liners. Garnish with dark chocolate shavings and chopped peanuts if desired.

Enjoy Guilt-Free: Indulge in these delicious Protein Peanut Butter Cheesecake Cups, knowing they’re a healthier treat!
