Protein-Packed Egg White Bites

8 large egg whites

1 cup spinach, chopped (fresh or frozen)

1/2 cup cherry tomatoes, diced

1/2 cup bell peppers, finely chopped (any color)

1/2 cup low-fat cottage cheese or Greek yogurt

1/4 cup shredded low-fat cheese (cheddar or mozzarella)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

Optional: fresh herbs (such as basil or parsley), diced jalapeños for a spicy kick

Instructions
 

Preheat Oven: Begin by preheating your oven to 350°F (175°C). Start preparing your muffin tin by lightly greasing it or lining it with silicone baking cups for easy removal.

    Whisk the Egg Whites: In a large mixing bowl, combine the egg whites and whisk them vigorously until they are slightly frothy. This will help incorporate air for fluffier bites.

      Mix in the Add-Ins: To the whisked egg whites, add the chopped spinach, diced cherry tomatoes, and bell peppers. Stir in the cottage cheese (or Greek yogurt), shredded cheese, garlic powder, onion powder, salt, and black pepper. If you’re using any optional fresh herbs or jalapeños, fold those in as well.

        Fill the Muffin Tin: Pour the egg white mixture into the prepared muffin tin, filling each cavity about 3/4 full. This will allow room for the egg whites to rise as they cook.

          Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the egg bites are set and slightly golden on top. A toothpick inserted should come out clean.

            Cool and Remove: Once baked, remove the muffin tin from the oven and let it cool for about 5 minutes. Use a fork or silicone spatula to gently loosen the sides before carefully popping them out.

              Serve: Your Protein-Packed Egg White Bites are now ready to be enjoyed! Serve them warm or let them cool complete and store them in an airtight container for a convenient breakfast or snack throughout the week.
