2 cups all-purpose flour

2 cups granulated sugar

1 cup unsweetened applesauce

1/2 cup vegetable oil

1/2 cup buttermilk

4 large eggs

2 teaspoons vanilla extract

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon salt

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1 cup chopped pecans (optional)

1 cup shredded coconut (optional)

1/2 cup brown sugar (for topping)

1 tablespoon butter (for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.

    Mix the Wet Ingredients: In a large mixing bowl, combine the applesauce, vegetable oil, buttermilk, and eggs. Whisk together until well blended. Add the vanilla extract and mix again.

      Combine the Dry Ingredients: In another bowl, whisk together the flour, granulated sugar, baking soda, baking powder, salt, ground cinnamon, and nutmeg until thoroughly combined.

        Combine Wet and Dry Mixtures: Gradually add the dry mixture to the wet mixture, stirring until just combined. Be careful not to overmix.

          Add Optional Ingredients: If desired, fold in the chopped pecans and shredded coconut for added texture and flavor.

            Pour into Pan: Pour the batter into the prepared baking pan and smooth the top with a spatula.

              Prepare Topping: In a small bowl, mix together the brown sugar and melted butter until crumbly. Sprinkle this mixture evenly over the batter.
