8 oz. egg noodles or rice noodles

1 lb. ground pork or chicken

1 cup finely chopped napa cabbage

1/2 cup shredded carrots

2 green onions, chopped

2 cloves garlic, minced

1 inch ginger, grated

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon rice vinegar

1 teaspoon chili oil (optional for heat)

Salt and pepper to taste

1 tablespoon vegetable oil (for frying)

Fresh cilantro, for garnish

Sesame seeds, for garnish

Instructions
 

Cook Noodles: In a pot of boiling salted water, cook the egg noodles or rice noodles according to package instructions. Drain and set aside.

    Prepare Filling: In a large bowl, combine the ground meat, napa cabbage, shredded carrots, green onions, minced garlic, grated ginger, soy sauce, sesame oil, rice vinegar, and chili oil (if using). Season with salt and pepper. Mix until well combined.

      Form Potstickers: Take a small amount of the filling (about a tablespoon) and form it into a small ball. Flatten it slightly. Repeat until all filling is used.

        Pan-Frying Potstickers: In a large skillet, heat vegetable oil over medium heat. Add the potstickers in batches and cook for about 2-3 minutes, or until the bottoms are golden brown. Carefully add enough water to cover the bottom of the skillet (about 1/4 inch) and cover with a lid. Let steam for 5-7 minutes, or until the water has evaporated and potstickers are cooked through. Remove from skillet and repeat with remaining potstickers.

          Assemble Bowls: In a large bowl, add a serving of the cooked noodles. Top with a few potstickers, fresh cilantro, and a sprinkle of sesame seeds. Drizzle with additional soy sauce or chili oil, if desired.
