3 medium potatoes, peeled and diced

1 can (15 oz) of cannellini beans, rinsed and drained

1 cup of green beans, trimmed and chopped

1 medium onion, diced

2 cloves garlic, minced

4 cups vegetable broth (or chicken broth)

1 cup diced tomatoes (canned or fresh)

2 teaspoons dried thyme

1 teaspoon smoked paprika

1 bay leaf

Salt and pepper, to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Optional: A splash of lemon juice for brightness

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onions and garlic. Sauté for 4-5 minutes until they are softened and fragrant.
