Ingredients

4 bone-in, skin-on chicken thighs

2 oz orange juice (freshly squeezed)

1 oz lime juice (freshly squeezed)

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon dried oregano

½ teaspoon ground coriander

½ teaspoon chili powder

½ teaspoon salt

¼ teaspoon black pepper

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions

Marinade Preparation: In a medium bowl, whisk together the orange juice, lime juice, minced garlic, olive oil, cumin, smoked paprika, oregano, coriander, chili powder, salt, and black pepper until well combined.

Marinate Chicken: Place the chicken thighs in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring each piece is fully coated. Seal the bag or cover the dish with plastic wrap. Marinate in the refrigerator for at least 2 hours, preferably overnight for maximum flavor.

Preheat the Oven: Preheat your oven to 425°F (220°C).

Prepare for Baking: Remove the chicken from the marinade and let any excess drip off. Arrange the chicken thighs skin-side up on a baking sheet lined with parchment paper or a greased roasting pan.

Bake the Chicken: Roast the chicken in the preheated oven for 30-35 minutes, or until the skin is crispy and the internal temperature reaches 165°F (75°C). For an extra crispy skin, you can broil for an additional 2-3 minutes after roasting.

Rest and Serve: Once done, remove the chicken from the oven and let it rest for 5-10 minutes. Garnish with fresh cilantro and serve with lime wedges on the side.

Enjoy: Serve your mouth-watering Pollo Asado with rice, tortillas, or a fresh side salad for a complete meal.
