Ingredients
  

1 pre-made pie crust (or homemade if preferred)

2 cups fresh pineapple, diced

3/4 cup granulated sugar

1/4 cup cornstarch

1/4 teaspoon salt

1/2 teaspoon ground cinnamon

1 tablespoon lemon juice

1/4 cup coconut milk

1 tablespoon butter, cubed

1 egg, beaten (for egg wash)

Optional: Whipped cream or vanilla ice cream for serving

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Pineapple Filling: In a large mixing bowl, combine the diced pineapple, granulated sugar, cornstarch, salt, cinnamon, lemon juice, and coconut milk. Toss until the pineapple is well-coated and let it sit for about 10 minutes to marinate.

      Prepare the Pie Crust: If using a pre-made pie crust, place it into a 9-inch pie pan. If making a homemade crust, roll out the dough and fit it into the pan, ensuring to leave some overhang.

        Add the Filling: Pour the pineapple filling into the pie crust and dot the top with cubes of butter.

          Crust Topping: If desired, you can use a second pie crust to create a lattice top. Alternatively, fold the overhanging pie crust edges under and crimp them to form a decorative edge.

            Egg Wash: Brush the top crust (or edges) with the beaten egg for a golden finish.

              Bake the Pie: Bake the pie in the preheated oven for about 25-30 minutes or until the filling is bubbly and the crust is golden brown. If the edges brown too quickly, cover them with strips of aluminum foil.

                Cool and Serve: Once done, remove the pie from the oven and let it cool for at least 30 minutes before slicing. This cooling period helps the filling set.
