1 cup coconut milk

1 cup heavy cream

1/2 cup granulated sugar

2 teaspoons vanilla extract

2 1/2 teaspoons unflavored gelatin powder

3 tablespoons cold water

Pinch of salt

For the pineapple topping:

1 fresh pineapple, peeled, cored, and diced

1/4 cup granulated sugar

1 tablespoon fresh lime juice

1 tablespoon chopped fresh mint (optional, for garnish)

Prepare the Gelatin: In a small bowl, sprinkle the gelatin over the cold water and let it sit for about 5-10 minutes until it blooms and becomes gelatinous.

    Heat the Cream Mixture: In a medium saucepan, combine the coconut milk, heavy cream, granulated sugar, vanilla extract, and a pinch of salt. Heat over medium heat while stirring occasionally until the sugar has dissolved and the mixture is warm (but not boiling).

      Add Gelatin: Remove the saucepan from the heat. Once the cream mixture is warm, add the bloomed gelatin and stir until completely dissolved.

        Pour into Molds: Carefully pour the panna cotta mixture into individual serving cups or molds. Allow them to cool at room temperature for about 30 minutes.

          Chill: Once cooled, cover with plastic wrap and refrigerate for at least 4 hours, or until set. For best results, refrigerate overnight.

            Prepare the Pineapple Topping: In a medium bowl, combine the diced pineapple, sugar, and lime juice. Stir to combine and let it sit for about 20-30 minutes to allow the flavors to meld.

              Serve: To serve, gently run a knife around the edges of the panna cotta molds and invert onto plates, if desired. Top with the pineapple mixture and garnish with chopped mint if using.
