1 cup crushed pineapple, drained

For the frosting:

1 cup heavy whipping cream

½ cup powdered sugar

1 teaspoon vanilla extract

Preheat and Prepare: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan, or line the bottom with parchment paper for easy removal.

    Mix Dry Ingredients: In a medium bowl, combine the flour, baking powder, baking soda, and salt. Whisk together and set aside.

      Cream Butter and Sugar: In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy. This should take about 3-5 minutes.

        Add Eggs and Vanilla: Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Add in the vanilla extract and mix until smooth.

          Combine Wet Ingredients: Gradually add the buttermilk to the creamed mixture, mixing just until incorporated.

            Fold in Pineapple: Gently fold in the crushed pineapple, ensuring it’s evenly distributed throughout the batter.
