1 pound large sea scallops (about 12-15)

2 tablespoons unsalted butter

1 tablespoon olive oil

Salt, to taste

Freshly ground black pepper, to taste

2 cloves garlic, minced

1 tablespoon fresh lemon juice

1 tablespoon fresh parsley, finely chopped

Lemon wedges, for serving

Preparation: Start by ensuring your scallops are completely thawed if they were frozen. Gently pat them dry with paper towels to remove excess moisture. This step is crucial for achieving a beautiful sear. Season both sides of the scallops generously with salt and freshly ground black pepper.

    Heat the Pan: In a large, heavy skillet (preferably cast iron or stainless steel), heat the olive oil over medium-high heat until it shimmers but does not smoke.

      Sear the Scallops: Carefully place the scallops in the pan, making sure not to overcrowd them (work in batches if necessary). Let them sear without moving them for about 2-3 minutes, until they develop a deep golden-brown crust.

        Flip and Add Flavor: Turn the scallops over using tongs. Add the butter and minced garlic to the pan.
