1 lb large sea scallops (about 12-15)

Sea salt, to taste

Freshly cracked black pepper, to taste

2 tablespoons olive oil

4 tablespoons unsalted butter (divided)

2 cloves garlic, minced

1 tablespoon fresh lemon juice

1 tablespoon fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Pat Dry the Scallops: Begin by rinsing the scallops under cold water to remove any sand. Use paper towels to thoroughly pat them dry. This step is crucial as moisture will prevent a proper sear.

    Season: Sprinkle sea salt and freshly cracked black pepper generously over both sides of the scallops. This enhances their natural flavor.

      Preheat the Pan: In a large skillet, heat the olive oil over medium-high heat. Ensure the oil is hot but not smoking, as this is key to achieving that beautiful golden crust.

        Sear the Scallops: Place the scallops in the hot pan, making sure they are not overcrowded. You may need to do this in batches. Sear for about 2-3 minutes on one side until a golden crust forms.

          Flip & Butter Baste: Using tongs, carefully flip the scallops. Immediately add 2 tablespoons of butter and the minced garlic to the pan. As the butter melts, tilt the pan and spoon the melted butter over the scallops for about 1-2 more minutes until they are opaque and cooked through (internal temperature should reach 125°F or 52°C).

            Add Lemon Juice: Once cooked, drizzle the fresh lemon juice over the scallops for added brightness and flavor.

              Plate Up: Transfer the scallops onto a warm plate. Pour any remaining butter and garlic from the pan over the scallops.

                Garnish & Serve: Sprinkle with fresh parsley for color. Serve immediately with lemon wedges on the side.
