Ingredients

4 slices of artisanal sourdough bread

1 cup shredded sharp cheddar cheese

1 cup shredded Gruyère cheese

2 tablespoons unsalted butter, softened

2 tablespoons mayonnaise (for a creamy spread)

1 tablespoon Dijon mustard

1/4 teaspoon garlic powder

1/4 teaspoon black pepper

Fresh chives or parsley, finely chopped (for garnish)

Optional: 2 slices of crispy cooked bacon or slices of ripe tomato for added flavor

Instructions

Prepare the Cheese Mixture: In a bowl, combine the shredded cheddar and Gruyère cheese. For added flavor, you can mix in chopped chives or parsley if desired.

Prepare the Spread: In a separate small bowl, mix the softened butter, mayonnaise, Dijon mustard, garlic powder, and black pepper until well combined.

      Assemble the Sandwich:

        - Take two slices of sourdough bread and spread a generous amount of the butter-mayo mixture on one side of each slice.

          - Place one slice of bread, butter side down, on a clean surface.

            - Layer half of the cheese mixture on the unbuttered side, and add optional ingredients like bacon or tomato if using.

              - Top with the remaining cheese mixture and then cover with the second slice of bread, facing the unbuttered side up.

Heat the Grill: Preheat your grill or skillet over medium heat. Make sure it's properly heated to ensure that the bread gets crispy and the cheese melts perfectly.

Grill the Sandwich: Place the assembled sandwich onto the grill or skillet. Cook for about 4-5 minutes on one side, or until the bread is golden brown and crispy.

Flip and Finish: Carefully flip the sandwich using a spatula, and grill the other side for an additional 4-5 minutes until golden brown and the cheese is melted.

Rest and Serve: Once both sides are perfectly grilled, remove the sandwich from the heat and let it rest for 1-2 minutes. This helps the cheese set slightly for cleaner slicing.

Garnish and Enjoy: Slice the sandwich in half, garnish with fresh chives or parsley, and serve warm for a delightful experience. Pair with a side of tomato soup for a classic combination.
