1 cup (2 sticks) unsalted butter, softened

1 ½ cups granulated sugar

2 large eggs

1 teaspoon pure vanilla extract

2 ¾ cups all-purpose flour

1 teaspoon baking soda

½ teaspoon cream of tartar

½ teaspoon salt

¼ cup granulated sugar (for rolling)

1 tablespoon ground cinnamon (for rolling)

Instructions
 

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, cream together the softened butter and 1 ½ cups granulated sugar using a hand mixer or stand mixer until light and fluffy (about 3-4 minutes).

      Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Add the vanilla extract and mix until combined.

        In a separate bowl, whisk together the flour, baking soda, cream of tartar, and salt. Gradually incorporate the dry ingredients into the wet mixture, mixing just until combined. Be careful not to overmix.

          In a small bowl, combine ¼ cup granulated sugar with the ground cinnamon.

            Using a cookie scoop or tablespoon, portion out the dough and roll each ball into the cinnamon-sugar mixture until fully coated. Place the dough balls on the prepared baking sheet, about 2 inches apart.

              Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers should still look slightly soft; they will continue to firm up while cooling.

                Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
