Ingredients

1 cup all-purpose flour

2 tablespoons granulated sugar

1 tablespoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup buttermilk (or milk with 1 tablespoon vinegar added, let sit for 5 minutes)

1 large egg

2 tablespoons unsalted butter, melted (plus more for cooking)

1 teaspoon vanilla extract

1/2 cup semi-sweet chocolate chips

Optional: Whipped cream or maple syrup for serving

Instructions

Prepare the Batter: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

Mix Wet Ingredients: In a separate bowl, combine the buttermilk, egg, melted butter, and vanilla extract. Whisk until smooth.

Combine Mixtures: Pour the wet ingredients into the dry ingredients. Stir gently with a spatula until just combined. Be careful not to overmix; the batter should have some lumps. Gently fold in the chocolate chips.

Heat the Pan: Preheat a non-stick skillet or griddle over medium heat. Lightly grease it with butter.

Cook the Pancakes: Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for an additional 1-2 minutes until golden brown.

Serve: Remove the pancakes and keep warm while you repeat with the remaining batter. Serve topped with a sprinkle of chocolate chips, whipped cream, and syrup if desired.

Enjoy: Dive into your fluffy, chocolate chip-filled pancakes with your favorite toppings!
