Ingredients

1 cup unsalted butter, softened

3/4 cup powdered sugar

2 cups all-purpose flour

1/2 teaspoon salt

1 teaspoon vanilla extract

1 cup pecans, finely chopped

1/2 teaspoon ground cinnamon

1/4 cup granulated sugar (for topping)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a 9x13 inch baking dish with parchment paper, leaving some overhang on the sides for easy removal later.

Mix the Butter and Sugar: In a large mixing bowl, cream together the softened butter and powdered sugar until light and fluffy, about 2-3 minutes using an electric mixer.

Add Dry Ingredients: Gradually sift in the flour and salt, mixing on low speed until just combined. Avoid over-mixing.

Incorporate Flavors: Add the vanilla extract, ground cinnamon, and finely chopped pecans to the dough. Fold gently with a spatula until the pecans are evenly distributed.

Spread the Dough: Transfer the shortbread dough into the prepared baking dish. Use your hands or a spatula to spread the dough evenly, pressing it down firmly to create a solid layer.

Bake the Bars: Place the dish in the preheated oven and bake for 25-30 minutes or until the edges are lightly golden and the center appears set.

Topping: In the last 5 minutes of baking, sprinkle the granulated sugar evenly over the top of the baked shortbread for a sweet crust.

Cool and Slice: Remove from the oven and let the shortbread cool in the pan on a wire rack for about 10 minutes. Use the parchment paper overhang to lift the shortbread from the pan and allow it to cool completely on the rack. Once cooled, slice into bars and serve.

Enjoy!: Delight in these buttery, nutty pecan shortbread bars with a cup of tea or coffee!
