Ingredients

2 large ripe bananas, mashed

1 cup creamy peanut butter (or crunchy for texture)

1/2 cup honey or maple syrup

1 teaspoon vanilla extract

2 cups rolled oats

1/2 cup dark chocolate chips (or milk chocolate if preferred)

1/4 teaspoon salt

1/2 teaspoon cinnamon (optional)

1/2 cup chopped nuts (walnuts or almonds, optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper, leaving a bit overhang for easy removal later.

Mash Bananas: In a large mixing bowl, mash the ripe bananas until smooth. You can use a fork or potato masher for this.

Mix the Wet Ingredients: Add the creamy peanut butter, honey (or maple syrup), and vanilla extract to the mashed bananas. Stir well until combined, ensuring everything is mixed evenly.

Combine Dry Ingredients: In a separate bowl, combine the rolled oats, salt, cinnamon (if using), and chopped nuts. Mix these dry ingredients together thoroughly.

Combine Wet and Dry Ingredients: Gradually add the dry ingredients into the wet mixture. Stir until just combined. The mixture should be thick, and you may need to use your hands to incorporate everything together.

Add Chocolate Chips: Gently fold in the dark chocolate chips ensuring they are evenly distributed throughout the mixture.

Spread in Pan: Pour the mixture into the prepared baking pan. Press it down firmly with your hands or a spatula to create an even layer.

Bake: Place the pan in the preheated oven and bake for 20-25 minutes, or until the edges start to turn golden and the center looks set.

Cool and Slice: Once baked, remove from the oven and let it cool in the pan for about 10 minutes. Then, use the parchment overhang to lift the bars out and transfer them to a wire rack. Allow to cool completely before slicing into squares or bars.

Store: These bars can be stored in an airtight container at room temperature for up to a week, or in the refrigerator for longer freshness.
