Ingredients

2 cups rolled oats

1 cup creamy peanut butter (or crunchy, for texture)

½ cup honey or maple syrup

1 teaspoon vanilla extract

1 teaspoon cinnamon

½ teaspoon salt

1 cup whole wheat flour (or all-purpose flour)

¾ cup fruit preserves or jam of choice (strawberry, grape, or raspberry work well)

½ cup chopped nuts (optional, for added crunch)

¼ cup mini chocolate chips (optional, for a touch of sweetness)

Instructions

Preheat the oven: Begin by preheating your oven to 350°F (175°C). Line an 8x8-inch baking dish with parchment paper, leaving a bit of overhang for easy removal, and lightly grease it.

Mix the wet ingredients: In a large mixing bowl, combine the peanut butter, honey (or maple syrup), and vanilla extract. Use an electric mixer or a whisk to blend these ingredients until smooth and creamy.

Add dry ingredients: To the peanut butter mixture, add the rolled oats, whole wheat flour, cinnamon, and salt. Stir everything together using a wooden spoon or spatula until evenly combined. If you’re adding chopped nuts or chocolate chips, fold them into the mix at this stage.

Prepare the base: Transfer about two-thirds of the oatmeal mixture into the prepared baking dish. Press it down evenly with your hands or a spatula to create a firm base.

Spread the jam: Spoon the fruit preserves or jam over the pressed oatmeal base. Use a spatula to spread it evenly, leaving a little margin at the edges to prevent overflow.

Add the topping: Take the remaining oatmeal mixture and crumble it over the jam layer. Gently press it down to ensure it sticks but still retains some texture.

Bake the bars: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and firm to the touch.

Cool and slice: Once baked, remove the dish from the oven and let it cool in the pan for about 15 minutes. Using the parchment overhang, carefully lift the bars out and transfer them to a cutting board to cool completely. Once cool, slice into squares or rectangles.

Enjoy: Serve the peanut butter and jelly oatmeal bars as a quick breakfast, a nutritious snack, or a delightful dessert!
