Peach Salsa Grilled Chicken Tacos

For the Chicken:

2 large boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon cumin

½ teaspoon chili powder

Salt and pepper to taste

Juice of 1 lime

For the Peach Salsa:

2 ripe peaches, diced

½ red onion, finely chopped

1 jalapeño, seeds removed and finely chopped

¼ cup fresh cilantro, chopped

Juice of 1 lime

Salt and pepper to taste

For the Tacos:

8 small corn or flour tortillas

1 cup shredded lettuce

½ cup crumbled feta or cotija cheese (optional)

Lime wedges for serving

Instructions
 

Marinate the Chicken: In a bowl, whisk together olive oil, smoked paprika, garlic powder, cumin, chili powder, lime juice, salt, and pepper. Add the chicken breasts and coat well. Let them marinate for at least 30 minutes, preferably 2 hours, in the fridge.

    Make the Peach Salsa: In a separate bowl, combine the diced peaches, red onion, jalapeño, cilantro, lime juice, salt, and pepper. Stir gently to combine. Taste and adjust seasoning if needed. Set aside to let the flavors meld.

      Grill the Chicken: Preheat your grill to medium-high heat. Remove the chicken from the marinade and place it on the grill. Grill for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C) and the chicken is cooked through. Remove from the grill and let it rest for a few minutes.

        Warm the Tortillas: While the chicken is resting, warm the tortillas on the grill for about 1 minute on each side or until they are nice and pliable.

          Slice the Chicken: After resting, slice the grilled chicken into thin strips.

            Assemble the Tacos: Take a warm tortilla, add a handful of shredded lettuce, a few slices of grilled chicken, and spoon generous amounts of peach salsa on top. If desired, sprinkle with crumbled feta or cotija cheese.
