1 ½ cups all-purpose flour

1 tablespoon granulated sugar

½ teaspoon salt

½ cup cold unsalted butter, cubed

4-6 tablespoons ice water

3 ripe peaches, pitted and sliced

1 cup fresh raspberries

¼ cup granulated sugar (adjust based on sweetness preference)

1 tablespoon cornstarch

1 teaspoon vanilla extract

1 tablespoon lemon juice

1 teaspoon cinnamon (optional)

For Assembly:

1 egg, beaten (for egg wash)

Granulated sugar for sprinkling

Instructions
 

Make the Dough:

    - In a large mixing bowl, whisk together the flour, sugar, and salt.

      - Add the cubed butter and mix until the mixture resembles coarse crumbs (you can use a pastry cutter or your fingers).

        - Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Do not overwork it.

          - Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 1 hour.

            Prepare the Filling:

              - In a medium bowl, combine the peach slices, raspberries, sugar, cornstarch, vanilla extract, lemon juice, and cinnamon. Gently mix until the fruit is coated and set aside for about 15 minutes to allow the juices to meld.

                Preheat the Oven:

                  - Preheat your oven to 400°F (200°C).

                    Roll Out the Dough:

                      - On a lightly floured surface, roll out the chilled dough into a 12-inch circle. Transfer it to a parchment-lined baking sheet.
