8 oz (225g) penne pasta

2 ripe peaches, diced (you can leave the skin on for extra flavor)

1 cup ricotta cheese

1 cup shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese

1 cup creamy alfredo sauce (store-bought or homemade)

1 tsp dried thyme

1 tsp garlic powder

Salt and black pepper, to taste

1/2 cup fresh basil leaves, chopped (for garnish)

1/2 cup breadcrumbs (optional, for a crunchy topping)

2 tbsp olive oil (for drizzling)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

      Prepare the Peach Mixture: In a large mixing bowl, combine the diced peaches, ricotta cheese, 1/2 cup of shredded mozzarella, Parmesan cheese, alfredo sauce, thyme, garlic powder, salt, and black pepper. Mix well until seamlessly blended.

        Combine with Pasta: Gently fold the cooked pasta into the peach and cheese mixture until all the pasta is evenly coated.

          Assemble the Bake: Transfer the pasta mixture into a greased baking dish (about 9x13 inches). Spread it out evenly.
